Start of Day Staff Check-in Confirm attendance and assign roles (prep, cooking, cleaning, dishwashing). Kitchen Readiness Inspect cleanliness and sanitation of kitchen surfaces and equipment. Ensure all safety equipment is functioning (fire extinguisher, first aid kit). Inventory & Supplies Review inventory for daily meals. Check storage temperatures (refrigerators, freezers, hot holding units). Order or request supplies if needed. Pre-Meal Preparation Menu Planning Review menu for the day, including dietary requirements (low sodium, diabetic, texture-modified meals). Food Prep Oversight Monitor proper handwashing and glove use. Verify ingredients are fresh and properly stored. Ensure allergen control measures are followed (labeling, separation). Equipment Setup Ensure cooking and serving equipment is clean and ready. Check that utensils are sanitized. Meal Service Cooking Supervision Oversee portion sizes and recipe adherence. Monitor cooking temperatures for food safety. Service Coordination Ensure timely plating and delivery. Supervise tray accuracy (correct diet, correct patient name). Quality Control Taste and visually inspect meals before service. Resolve any last-minute issues (shortages, substitutions). Post-Meal Duties Cleaning & Sanitizing Oversee dishwashing procedures (correct water temperature, sanitizer use). Inspect workstations, floors, and equipment for cleanliness. Waste Management Ensure proper disposal of food waste and recycling. Record any unusual waste trends (excess leftovers). End of Day Inventory Check Record remaining ingredients and supplies. Identify items nearing expiration for priority use. Maintenance & Reports Report equipment issues. Complete daily logs (temperatures, cleaning, incidents). Team Debrief Brief staff on next day's plan. Address performance feedback or training needs. Ongoing Responsibilities Compliance Ensure adherence to health and safety regulations (HACCP, local food codes). Staff Training Schedule training on hygiene, safety, and dietary updates. Coordination Communicate with dietitians, nursing staff, and administration. Continuous Improvement Evaluate workflow efficiency and patient satisfaction.
