Stammtisch, a well-established Portland dining destination for over 11 years, is seeking a skilled and passionate Head Chef to lead our culinary team. Known for our impressive food program that pairs perfectly with a unique German beer menu, Stammtisch blends authentic beer hall tradition with elevatedfort food. Our next chef will continue this identity while keeping the menu approachable, seasonal, and exciting.
About Stammtisch
Located in Portland s Kerns neighborhood, Stammtisch is the ambitious German-style gastropub from the creators of Prost! Since opening in 2014, we ve earned a reputation for rare German beer imports, an innovative cocktail program, and refined-yetforting cuisine. Designed to evoke an Old World beer hall, the space features rustic brick, warm wood, and authentic German glassware.
Our menu features beer-house classics like pretzels with schmaltz, currywurst, braised trout, schnitzel, dumplings, and the celebrated schweinshaxe (pork hock) which Willamette Week once called a tongue-melting layer cake of texture and richness.
Stammtisch was named Bar of the Year in 2015 by Willamette Week, praised for its refined setting, rich beer selection, and thoughtful food pairings. It also earned a spot in The Oregonian s 2025 ranking of the 40 Best Restaurants in Portland (No. 30), reaffirming its culinary durability and quality a decade after opening.
Responsibilities
Oversee all kitchen operations: menu planning, food prep, and quality control
Develop and innovate seasonal menus that reflect Stammtisch s character
Train, mentor, and inspire kitchen staff to ensure excellence and consistency
Manage inventory, control food costs, and uphold sanitation standards
Collaborate with management to maintain a positive, high-energy work environment and enhance guest experience
Requirements
Proven experience as Head Chef or Executive Chef in a high-volume kitchen
Culinary degree or equivalent certification preferred
Strong leadership andmunication skills
Ability to thrive in a fast-paced, evolving environment
Knowledge of seasonal ingredients and culinary trends
Oregon Food Handler s Card and relevant certifications
Hands-on approachfortable on the line as well as managing the team
