Job Description
Situated in Downtown s 2nd Street District, Austin Proper Hotel and Residences offers an artful immersion in lifestyle and wellbeing. With an emphasis on collaboration, Austin Proper features both inspired interiors by acclaimed designer Kelly Wearstler and is guided by the culinary creativity of Austin tastemaker MML Hospitality. Essentials include 238 rooms and suites; 99 branded residences; four unique settings for dining and drink; a focus on wellness with a dedicated spa and fitness center; and a variety of atmospheric event spaces. And it wouldn t be Proper without a 5th floor pool deck offering small-batch tequilas and sunset views.
A new omakase restaurant is set to open at Austin Proper Hotel later this year. This intimate, chef-driven project with focus on French and Japanese techniques. It will be rooted in conviviality and offer a highly personalized and immersive dining experience to the 25-seat restaurant. The culinary team brings international acclaim, and a philosophy rooted in discipline, creativity, and innovation.
The Bartender is responsible for all beverage-related operations, including pairing execution, bar mise-en-place, guest interaction, and beverage cost control. This role requires both precision in pairing delivery and creativity in cocktail development. The bartender works in close proximity to guests and must balance performance, adaptability, and a refined sense of hospitality. A deep understanding of sake, wine, and spirit profiles is essential, as well as the ability to execute off-menu classics when requested by guests.
Key Responsibilities:
Prepare and serve all beverage pairings including sake, wine, tea, and cocktails
Describe pairing details with clarity and product knowledge
Engage guests seated at the counter bar or waiting area with warm hospitality
Greet guests using name if known and present oshibori or wee beverage promptly
Offer pairing or drink rmendations during service
Adjust guest areafort (lighting, drinkware reset, napkin alignment)
Manage beverage mise-en-place and restocking of all bar items and glassware
Assist with clearing and resetting seating when FOH is overwhelmed
Manage beverage cost and inventory, including daily tracking and reordering
Maintain working knowledge of classic cocktails and fulfill guest requests even if not listed on the menu
Contribute creatively to seasonal or event-specific cocktail offerings
Respond to guest requests, allergies, or pacing issues with professionalism and urgency
Support service flow and FOH team when needed during high volume
Maintain direct reporting line to the General Manager.
Additional Functions:
Maintain cleanliness andanization of beverage service station
Assist with menu updates and beverage pairing sheets for each season
Coordinate with GM and Head Chef on beverage pacing relative to menu flow
Record feedback and guest preference notes for return visits
Participate in pre-service briefings and training sessions
Requirements:
3+ years of experience in a beverage-focused role within fine dining or omakase setting
In-depth knowledge of sake, wine, spirits, and Japanese tea
Strong guest interaction skills and attention to service timing
Ability to handle off-menu drink requests and maintain classic cocktail repertoire
Valid TABC certification and food handler permit
Comfortable multitasking in a high-pressure, open-service environment
Preferred Qualifications:
Experience in omakase or chef's table beverage service
Track record of cocktail innovation or menu development
Familiarity with beverage cost tracking software or inventory systems
