Job Details Major Food Group, the team that brought you Carbone, is hiring an experienced Sous Chef to join our team at Dirty French Steakhouse!
Located in the heart of Miamis Brickell neighborhood, Dirty French Steakhouse is a glamorous, high-energy steakhouse from Major Food Group that breathes new life into the storied genre while remaining true to its history. The menu combines the finest meat and fish, sourced from the worlds most esteemed purveyors, with French influences and an irresistible flair for bold flavors. Our wine list, which exceeds 700 bottles and is one of the most remarkable in the country, only adds to the restaurants spirit of sophisticated decadence.
RESPONSIBILITIES:
- Sourcing, ordering and receiving the highest quality ingredients
- Developing, teaching, and maintaining all recipes and techniques
- Executing menu items from start to finish
- Organizing a large team and holding each chef accountable for their responsibilities
- Overseeing and maintaining a smooth professional service
- Maintaining all kitchen equipment and following up for any repairs needed
- Maintaining high standards of cleanliness and organization
- Overseeing scheduling and inventory to work within a set budget
REQUIREMENT:
- 3+ years progressive experience in BOH operations, fine dining or Michelin Rated restaurant experience is preferred
- Strong knowledge of and competency performing BOH administrative duties, excellent organization skills and attention to details
- Excellent communication skills, self-motivated and demonstrates the ability to make quick and sound decisions
- Proven ability in training and mentoring staff to continuously develop their skills and knowledge while providing leadership and direction
