POSITION PURPOSE
Participates in the planning, preparation, assembly and service of a variety of cuisines. Some or all of the cooking may be in a venue where facets of the work are visible and may include interaction with guests.
DUTIES AND RESPONSIBILITIES
Prepare menu items, including proteins, using various methods such as slicing, carving, roasting, steaming, frying, marinating, grilling, sauteing and braising.
Marinate, grill, roast, griddle and carve proteins; steam vegetables and starches.
Review menus and order lists and consult with culinary leadership on the tasks for the day.
Perform display cooking to customer order, plating according to established standards and answering questions about ingredients, recipes and pricing.
Organize work to meet daily production goals and service needs.
Guide the work food service staff.
Monitor prepared foods for compliance with Washington State health code regulations, including taking and recording food temperatures before the food leaves the production area.
Participate in cleaning the kitchens tables and equipment using sanitizing solutions as needed.
Ensure that all foods used for the meal are properly wrapped, dated, labeled and stored before the close of the shift.
Ensure that all items in walk-in and in other storage areas are properly labeled and rotated correctly. Work with other staff members to ensure that this is being completed.
Maintain records of foods produced, foods wasted, and any recipe adjustments for the culinary leadership.
Inspect food service equipment to determine proper care, use and operation; report malfunctions to the culinary leadership.
Ensure that security and safety requirements are met; follow up with staff and supervisor on any issues.
Consult with culinary leadership to address requests to accommodate dietary restrictions.
Perform related duties as requested.
POSITION DIMENSIONS
These are 11.5-month cyclic positions. These positions are located at various UW Dining venues. Schedules may be changed with two weeks notice.
MINIMUM REQUIREMENTS
Possession of, or eligible to obtain a Washington State Food Worker Card within two weeks of employment AND one year of experience preparing and serving food and maintaining clean work area.
Equivalent education and/or experience may substitute for minimum qualifications except when there are legal requirements, such as a license, certification, and/or registration.
SPECIFIC POSITION REQUIREMENTS
Using production kitchen equipment, including troubleshooting of simple operational problems.
Preparing menu items from scratch using recipes and a variety of cooking techniques.
Working in environments where there is continuous interaction with guests and staff throughout the work shift.
Explaining culinary and cooking techniques to entry level staff with little knowledge of food service.
Reading, speaking, writing and following written instructions in English.
Maintaining attendance and punctuality based on a work schedule where hours of work may vary based on business needs.
DESIRED QUALIFICATIONS
Experience using email, menu management systems, Microsoft Word and Excel.
Familiarity with menu management systems.
CONDITIONS OF EMPLOYMENT
A satisfactory outcome from criminal background verification is required prior to hire.
A satisfactory outcome from previous employment verification and reference check.
Membership in the Washington Federation of State Employees (WFSE) Union.
Compensation, Benefits and Position Details
Pay Range Minimum:
$44,256.00 annual
Pay Range Maximum:
$54,732.00 annual
