About Parachute
Parachute is a modern, viennoiserie-forward bakery located inside San Franciscos iconic Ferry Building. With a focus on laminated and enriched doughs, our pastry program revolves around viennoiseriecroissants, danishes, and other flaky, buttery goodscrafted fresh throughout the day. Our space includes a retail counter offering rotating seasonal pastries, cold-pressed juices, house-made confections, and a fully fledged coffee bar.
We operate as a tight-knit, highly skilled team with a shared goal: to execute exceptional product with precision, creativity, and care.
Position Overview
We are seeking a dedicated and skilled Pastry Sous Chef to join our opening team. This role is central to daily production and team leadership, working alongside the Head Chef to maintain the highest standards of product quality, consistency, and kitchen organization. Youll be primarily focused on viennoiserie and laminated pastries, with opportunities to contribute to confections and other areas of our pastry program.
Key Responsibilities
Assist the Head Chef with daily production of laminated pastries (croissants, danishes) and select chocolates and confections (bread spreads, toffees, little bites)
Ensure product consistency in quality, presentation, and taste
Execute all aspects of pastry prep: measuring, mixing, laminating, shaping, and baking
Help oversee kitchen operations: workstation setup, equipment use, cleanliness
Support training and development of junior bakers, ensuring adherence to proper technique and food safety standards
Maintain compliance with all health and hygiene protocols
Requirements
35 years of professional bakery experience
Food Protection Certification required
Formal training in pastry or baking preferred
Strong technical proficiency in laminated pastry and enriched/leavened doughs
Ability to thrive in a fast-paced, high-volume environment
Strong leadership, communication, and organizational skills
Availability for early mornings, weekends, and holidays
Physical stamina for a demanding kitchen environment, including lifting and long periods of standing
