Job DetailsDouble Luck is a Chinese Restaurant by Bad Juju (Tam Tam, Over Under, Low Key, Fratesi's) in Miami. Fun and familiar, with Cantopop on the playlist and chicken flaming on tables, Double Luck is a place as well suited for occasions as lazy sunday evenings with friends.
Chef Adrian Ochoa (Tam Tam, Ghee, Itamae) brings a menu with some elevated Chinese-American classics as well as regional Chinese favorites and dishes inspired and utilizing techniques and ingredients of Chinese cooking.
Overview:
Line Cook is a professional cook whose job is to produce and execute all assigned menu items in an efficient and consistent manner while following the specifications, recipes and techniques of the Executive Chef. In this specific instance, looking for a cook comfortable and experienced on the Wok.Responsibilities:
- Set up and stock stations with all necessary supplies and ingredients
- Prepare food for service (e.g. chopping vegetables, butchering meat, or preparing sauces)
- Prepares a variety of meats, seafood, poultry, vegetables, dairy and other food items using knives, electric mixers, immersion blenders, food processors, scales, and portion bags.
- Processes prepared foods for service using ovens, gas stoves, griddles, fryers
- Assure that each item is cooked to the Chef and guests specifications
- Running food to assigned tables and or bar when needed
- Answer, report and follow executive chefs instructions
- Maintains a clean and sanitary work station area including tables, shelves, broilers, saute burners, ovens, wok's, flat top griddles and refrigeration equipment both during and after service, NO EXCEPTIONS.
- Stock inventory appropriately with clearly written label ( Date/ Name )
- Ensure that food comes out simultaneously, in high quality and in a timely fashion
- Assumes responsibility for quality, food safety/sanitation and timeliness of products served
- Maintain a positive and professional approach with coworkers and customers, NO JERKS.
- Perform other related duties as assigned by the management staff
Experience and Qualification:
- Previous kitchen, work experience or super chill with great attitude and work ethic
- Accuracy, speed in executing assigned tasks, attention to detail, cleanliness and organization
- Ability to Give and Take Constructive Feedback and Criticism.
- Initiative
- Decent taste and or interest in new foods, cuisines, techniques, music and the arts.
- Experience on the wok station is a major major major major bonus.
