Verveine Cafe & Bakery in Central Square, Cambridge is seeking a motivated and passionate full-time sous chef to join our team. As a sous chef, you have a unique opportunity to play a vital role in our operations, assisting in the production of our full menu savory, pastry, and breads as well as to maintain, shape, and run the cafe and bakery.

Responsibilities:

  • Oversee and assist with savory and bakery production including but not limited to savory food preparation and service, morning bake, mixing doughs, scaling ingredients for days production, shaping loaves, lamination, filling and decorating pastries, etc.
  • Provide supportive leadership to oversee, supervise, and inspire kitchen staff and reinforce standards for quality and excellence. Ability to lead in absence of Chef.
  • Have knowledge of all stations in the kitchen and oversee prep and production to ensure the highest quality of all prepared foods
  • Set up and break down stations
  • Assist with ordering and production planning
  • Assist with scheduling and training staff
  • Assist with new menu item and recipe development
  • Assist in controlling costs by effective purchasing of food, maintaining food cost goals, and monitoring labor levels
  • Slicing, bagging, and packaging product for display and deliveries
  • Maintain a clean, organized, and safe work environment follow all safety and sanitation protocols
  • Assist in receiving deliveries and inventory management
  • Collaborate effectively with other staff members, assisting as needed, and learning diverse skills
  • Maintain mindful and detail-oriented hospitality with guests

Skills and Requirements:

  • 3 years previous experience in a professional bakery or culinary environment, with knowledge of both baking and savory applications
  • Familiarity with various baking and savory techniques and principles, ingredients, and equipment. Experience with laminated doughs and gluten-free baking a plus.
  • Must be a source of positivity, curious, creative, willing to learn, and ask questions
  • Strong leadership skills and self-motivated
  • Able to maintain the highest of standards of food quality, presentation, sanitation, and safety
  • Highly organized with high attention to detail
  • Ability to multi-task, prioritize tasks effectively to meet production schedules, as well as cross train and learn diverse duties
  • Must be a team collaborator, have strong interpersonal and communication skills, and the ability to contribute to create a culture and work environment based on respect and support
  • Ability to stand for extended periods, lift heavy objects (up to 50 lbs), and work in a fast-paced environment
  • Flexibility to work early morning, weekend, and holiday shifts
  • ServSafe Manager Certification preferred
