The Senior Dining Room Manager is an advanced leadership position that is responsible for stage management of our talented Cast in a Fine Dining restaurant as well as mentoring fellow Dining Room Managers. In this role, you will ensure efficient and safe operations, drive an immersive Guest experience, increase Cast engagement and safeguard our brand. This role strives to deliver world-class Guest service standards; recognizes/coaches Cast behaviors; and manages the business through Key Business Drivers while maintaining strong connection to the rich history and heritage of our Disney Hotels.
Responsibilities:
Provide a world-class fine dining experience to our guest by focusing on Disney Service Standard to maintain the Restaurants Forbes rating
Demonstrate commitment to excellence and working in the operation daily, which includes interacting with guests and cast members and resolving any issues
Maintain a positive attitude and strong cast focus to inspire, engage, coach and develop a diverse and talented team
Recognize cast members and hold them accountable for delivering excellence with the Five Keys in safety, courtesy, inclusion, show and efficiency. Be a teacher and developer, take a sincere interest in the Cast and be vested in their success.
Exceed guest expectations that yield results and positive guest feedback to help achieve/maintain a Forbes 5-star rating
Strong advocate for change, inclusion, innovation and continuous improvement
Serve as a functional / subject matter expert of the operation
Participate in departmental meetings and communicate relevant information to cast members
Participate and provide operational perspective in project planning and LOB departmental meetings
Make balanced day-to-day operational decisions that benefit guests, cast members and the demands of the business
Manage daily staffing levels and anticipate shift coverage needs based on demand. Drive and deliver daily results.
Support local projects and monitor any potential impacts to the guest and cast experience
Serve as a change agent, taking calculated risks to integrate processes, removing barriers and aligning performance goals of the hourly Cast
Help develop and drive change to enhance overall revenue goals of the operation
Basic Qualifications:
Extensive wine expertise
Extensive expertise in Forbes 5-star standards
Certification in Wine Education or equivalent experience
Leadership experience engineering a high-end bar menu focused on craft cocktails
Can articulate current trends in fine dining space
Extensively understands fine dining cooking terms and techniques
6 years leadership/managerial experience, demonstrating professionalism and maturity
Demonstrated strong verbal and written communication skills, including conflict resolution, problem-solving and decision-making
Understand how to read a P&L to drive greater revenue
Ability to work in a fast-paced environment
Recognized as a positive leadership role model
Proven ability to lead effectively in a team environment, hold self and others accountable, as well as the ability to deal effectively with conflict with strong partnering and networking skills
Ability to effectively work independently as well as with teams
Demonstrated operational guest service experience and guest service skills
Demonstrated strong organization, multi-tasking and time management skills with attention to detail
Proficient in Microsoft Office products and adaptable to new technology
Ability to actively coach Cast Members to correct behavior across lines of business.
Proficient in basic computer functions necessary to operate in a Windows environment and adaptable to new technology
Ability to understand the impact of financial aspects of an operation (i.e. operating budget, revenue, labor, inventory systems, costs, etc.). Strong planning and organizational skills in relation to the Key Business Indicators.
Ability to be flexible with work schedule, including weekends, variable shifts and holidays
Understands scope beyond immediate area will partner with other hotel departments including Signature Dining, Banquets, Housekeeping, Front Desk, Bell & Valet, Spa, Engineering, Stores, etc.

Preferred Qualifications:
Experience managing a Forbes-rated fine dining restaurant
Prior experience at a Michelin starred restaurant preferred
6-9 Years of experience in a leadership role within Food & Beverage with responsibilities for:

o Food Cost Control
o High level Guest Service
o Team Development
o Demonstrated leadership attributes:
o Business acumen, driving and delivering results, collaboration and integration, entrepreneurial mindset/ownership, heritage/legacy/brand knowledge and versatility
o Prior experience leading in a union environment
o Bilingual skills
Preferred Education: Court of Master Sommeliers Introductory Level or higher
The hiring range for this position is $77,000-95,100. The base pay actually offered will take into account internal equity and also may vary depending on the candidates geographic region, job-related knowledge, skills, and experience among other factors. A bonus and/or long-term incentive units may be provided as part of the compensation package, in addition to the full range of medical, financial, and/or other benefits, dependent on the level and position offered.
