The Four Seasons Resort Lanai is looking for a Sushi Sous Chef who share s a passion for excellence and who infuse s enthusiasm into everything they do. Ou r teams have the opportunity to shape our guest experience by providing exceptional knowledge o f the Resort and exemplifying the Golden Rule in each interaction. Work authorization required .
WHAT YOULL DO
Our Sushi Chef prepares sushi, sashimi, rolls, tempura, udon , and a variety of hot and cold dishes in line with Four Seasons standards. Responsibilities also include crafting sauces, grilling, sauteing, and working with a wood oven. Precision in slicing fish and seafood to the correct size and angle is essential.
Assist in the planning and development of menus and recipes, ensure the correct preparation and presentation of a consistent level for all food items prepared through production and demonstration, utilize creative menu planning to minimizing waste.
Control labor and operating expenses through effective scheduling, budgeting, purchasing decisions, and inventory control.
Ensure that sanitation standards as set forth by Four Seasons, local, state, and federal regulations are in compliance as well as the cleanliness and organization of the kitchen.
Maintain control systems which will assure quality and portion consistency, monitor food shipments to ensure they meet established purchasing specifications as well and foster an awareness of the importance of food preparation and quality.
Communicate with employees and managers to ensure operational needs are met, coordinate menu tastings and pre-meal meetings to educate staff on food taste and preparation methods, attend regular operational meetings to ensure effective coordination and cooperation between departments; interact directly with guests to ascertain satisfaction.

WHAT TO BRING
Successful candidate must possess legal work authorization in United States (unless the candidate is currently in a managerial position at another Four Seasons location as they may qualify for a L-1 Visa sponsorship)
Required by the Hawaii State Department of Health to obtain a Tuberculous (TB) clearance card
Prior culinary experience is expected for this position, specific ally in the pr eparation of specialized innovative Japanese cuisine
Strong knife skills, fish knowledge and preparation skills are required
This position r equires continuous standing for 8 hrs per shift and the ability to lift , push and pull up to 70lbs.
Excellent communication skills are essential .
Weekend and Holiday availability required .
