The JOB:
The Chef de Cuisine is a key part of the leadership team driving excellence at LAuberge Del Mar a luxury seaside hotel offering the perfect balance of beach casual and upscale chic. This role is responsible for ensuring a sensational culinary experience for our guests and team members by creating culinary masterpieces. The CDC assists the Executive Chef with leading a team of culinarians that deliver a fresh and authentic experience showcasing local produce and sustainable seafood. This position includes oversight of all food production for Banquets, Adelaide Restaurant, Living Room, Pool Bar, In Room Dining, Employee Dining Room and Stewarding team.
Responsibilities include, but are not limited to:
Manage daily operations of the kitchen
Oversee the team members and direct food preparation
Assign specific tasks and responsibilities to team members and prepare staff roster
Meet with Executive Chef to review schedules, assignments, anticipated business levels and changes
Review daily specials with team members
Review BEO sheets and make note of any changes
Maintain kitchen equipment, such as ovens, freezers, grills, food processers, etc. to ensure they are in good working order
Monitor the physical inventory of kitchen equipment, supplies and food items
Perform quality control by inspecting plates before guests receive them, ensuring the quality of the dish are up to standards
Order items as necessary and generate purchase orders
Develop new menu items and create recipes
Incorporate new or different cooking methods and adapt dishes
Research recipes to inspire new dishes
Maintain good working relationships with key suppliers
Cultivate relationships with wholesale food suppliers, farmers and other vendors, visiting sites and sampling ingredients
Research current food trends and techniques
Assess the skills of existing team members and determine gaps or opportunities to recruit the right team members
Responsible for training new team members to kitchen standards
Ensure the kitchen adheres to all health and safety regulations

Requirements- 3-5 years experience in a high-volume luxury hotel, resort or banquet operation with a focus on fine dining
- Completion of a technical culinary education or apprenticeship program; Certificate in Culinary Arts preferred
- Experience with various cooking methods and procedures
- Maintain current Food Handlers Card
- Familiar with industry best practices
- Long hours sometimes required.
- Must be able to effectively communicate both verbally and written, with all levels of employees and guests in an attentive, friendly, courteous and service oriented manner.
