Under the direction of the Assistant Correctional Food Manager (ACFM), the Supervising Correctional Cook (SCC) assists the ACFM with supervision and daily logistics of the operation for the Central Conservation Camps. Duties may include, but are not limited to the following: camp sanitation inspections, train correctional staff and camp food service/incarcerated people workers; food ordering for the resident population in a State Correctional Facility; and provide technical support to camp staff including record keeping (food books). Maintain records and supply the camps with necessary tools and equipment; collect information for the weekly blanket approval form for the California Department of Corrections and Rehabilitation (CDCR) Regional Accounting Office. Supervise Correctional Supervising Cooks and incarcerated people workers. The SCC will perform other job-related duties as directed by the ACFM.
This position will be required to travel to conservation camps. See attached duty statement for more information.

Working Conditions
About this location -- Sierra Conservation Center (SCC) is located in the foothills near Jamestown, California, in the heart of the Mother Lode Gold Country.It is adjacent to the Stanislaus National Forest, offering pine trees, mountain streams, and an abundance of recreational activities (fishing, swimming, camping, skiing, golfing, etc.).The prison is approximately 70 miles from Yosemite National Park.
The primary mission of SCC is to provide housing, programs and services for minimum and medium custody incarcerated individuals, to aid in their rehabilitation. SCC is responsible for the training and placement of male incarcerated individuals in the Conservation Camp Program. SCC administers 31 male camps located throughout California.

Kitchen sanitation and safety procedures used in the operation, cleaning, and care of utensils, equipment and work areas to prevent food contamination, food borne illness, safety hazards and provide quality control. Safe food handling procedures to prevent food borne illness. Food values and nutritional substitutions within food groups to provide a nutritionally balanced/adequate diet. Food accounting methods to maintain budget accountability and sufficient quantities on hand. The use of purchase orders to buy food, supplies and equipment to ensure timely delivery of sufficient quantities. Training methods to determine training needs, evaluate training results, develop a qualified workforce, provide opportunity for upward mobility and meet the needs of the food service department. Principles of effective supervision to successfully manage all aspects of the food service operations. Perform inventories and make requisitions based on the current inventory to maintain sufficient quantities of food, equipment and supplies on hand. Safely use appropriate food service equipment to prepare, cook, dispense, and serve food. Judge food quality so that palatable, eye appealing food is served. Prepare and appropriately cook all food groups to make sure nutritious meals are served. Determine food quantities as necessary for groups of varying size so that different dining facilities receive adequate quantities of food. Direct the preparation of special diets to provide inmates that have documented needs an adequate/appropriate diet. Plan food production schedule to provide timely feeding, palatability and safety of food served. Successfully communicate and exchange information to food service staff, inmate workers and others, for proper direction. Plan and conduct training information and direction to food service staff, inmate workers and others for the safe and efficient operation of the food service department. Analyze situations accurately and adopt an effective course of action to provide quality services, safety and an efficient food service operation. Keep records and prepare reports to provide information and document compliance with various policies, procedures, laws and regulations.
