Barback Job Description:

As a Barback you play a vital support role in maintaining efficient bar operations. You'll work behind the scenes and alongside bartenders to ensure the bar is fully stocked, clean, organized, and ready for high-volume service. This position requires a strong sense of urgency, attention to detail, and a proactive mindset.

OPENING BARBACK CHECKLIST

  • Bring floor mats in from side of bar
  • Check fridges to see what NA products and wine need to be restocked from the night before
  • Run soda through guns to ensure lines are primed for the night.
  • Fill the wells with ice
  • Get bus tubs, rags, and sanitizer buckets
  • Fill 2 sanitizer buckets and put them under each well at the bar.
  • Fill the triple sinks with warm water, soap (3 drops), and two sanitizer tablets in that order.
  • Pull garnishes and juices from low boys, check for freshness and toss what isnt up to standard
  • Look at the list and make a list of EVERYTHING you need and get items from the basement fridge.
  • Set up a cutting station upstairs and prepare garnishes and juices
  • Fill garnish containers with garnish first. The rest can be put in deli containers. Label, date, refrigerate.
  • Uncover and replenish dry garnishes and tinctures (It is very important that you do not fill the bitters bottles past where the neck begins. The bitters will not dash properly if you overfill)
  • Make sure glassware supply is filled at both bars and organized in each station presentably.
  • Set up bar mats
  • Stock napkins, straws, and rags
  • Help bartender stock wells with liquor from doghouse and basement

CLOSING BARBACK CHECKLIST

  • Return all clean glassware to back bar and chilled glassware to low boys
  • When washing ANYTHING, take the tape o!!
  • Make note of any 86 or low syrups, juices, and batches and communicate to the manager.
  • Wipe down lowboys
  • Take the mats out of the bar so cleaners can sweep and mop.
  • Shut down dishwasher or drain triple sink
  • Take all dirty rags to hampers
  • Take sanitizer buckets back to dish pit
  • Take out trash
