Ballyhoo Hospitality Group is seeking a talented, hospitality focused Sous Chef to join our 2nd DeNucci's Restaurant in Highland Park.

About the concept: J oin our team at DeNucci's, where we pay homage to the Italian-American culinary tradition while creating a warm and inviting atmosphere for our guests. Inspired by the 1920s Italian migration to America, our menu features classic dishes such as Eggplant Parmesan, Branzino Picatta, Veal Marsala. We also offer New York-influenced pizza using a beloved recipe by Salvatore Sal Lo Cascio. Our Speciale del Giorno showcases nightly specials reminiscent of nonna's cooking, including Lasagna Bolognese, Pappardelle Genovese, and Sunday's Chicken Scarpariello. We are seeking passionate individuals to join our team and contribute to our focused wine and spirits program as we continue to strive to delight our guests.

Job Summary:

We are seeking a talented and motivated Sous Chef to join our kitchen team at Jackman & Co. The Sous Chef will play a crucial role in assisting the Executive Chef in all aspects of kitchen operations, ensuring the highest standards of food quality, consistency, and presentation. The ideal candidate will be a skilled leader, a creative problem-solver, and possess a strong passion for culinary excellence.

Essential Job Requirements:
(Includes but is not limited to the following duties. Other duties may be assigned.)

  • Provide leadership to create a culture and work environment based upon respect; providing opportunities for staff to learn, grow and develop their abilities through training
  • Perform inventory and purchasing responsibilities on a daily basis.
  • Ensure that all food and products are consistently prepared and served according to the restaurants recipes, portioning, cooking and serving standards. Continually strive to develop your staff in all areas of food education.
  • Ensure that all equipment is kept clean and kept in excellent working condition through personal inspection and by following the restaurants preventative maintenance programs.
  • Ensure that all products are received in the correct unit count and condition and deliveries are performed in accordance with the restaurants receiving policies and procedures.
  • Assist in creating a dynamic menu for the kitchens that evolves and changes on a seasonal basis
  • Supervise the kitchen during prep and service periods.
  • Expedite efficient and timely service standards for sit down and take away programs.
  • Schedule labor as required by business activity while ensuring that all positions are staffed when needed while maintaining labor cost objectives.
  • Foster a positive and collaborative work environment.
  • Communicate effectively with kitchen staff, front-of-house staff, and management.
  • Assist in resolving kitchen-related issues and challenges
  • Monitor food costs and minimize waste.
  • Ensure efficient kitchen flow and service
  • Maintain and troubleshoot kitchen equipment
  • Adhere to all health and safety regulations.

Qualifications:

  • Minimum of 2 years of experience as a Sous Chef or in a similar culinary leadership role.
  • Proven track record of culinary excellence and leadership skills.
  • Excellent communication, organizational, and problem-solving skills.
  • Ability to work effectively in a fast-paced, high-pressure environment.
  • Culinary degree or equivalent experience preferred.
  • Valid food handler's certification.
  • Ability to work nights, weekends, and holidays.

Compensation: Salary ($65,000.00 - $70,000.00)
