Job DetailsWere opening a Malaysian restaurantnot because its trendy (it's not), but because the cuisine deserves more honest representation in the city (and the country at large). Our goal is simple: bold, soulful food served in a room with real energy and no pretense. The menu is not strictly traditional, but its not built on passing buzzwords either. If you grew up in a 3rd culture kitchen you'll likely relate to what we're aiming for.
Were looking for a Chef de Cuisine who respects the craft, understands the cuisine, and wants to help build something with staying power. Youll have creative input, real responsibility, and the chance to lead a team that takes pride in what they do.
Who You Are:
A person with a deep knowledge and intuitive command of Southeast Asian ingredients and flavors. Familiarity with Malaysian cuisine is a huge plus but not imperative.
Comfortable in a fine dining kitchen but glad to leave tweezers behind (for the most part). More Francis Mallmann than Grant Achatz.
Experienced in managing a kitchen team , setting systems, and maintaining standards through a dinner rush without losing your head (or your sense of humor).
Someone who can balance respect for tradition, and be excited to depart from it with a clear culinary point of view.
Confident, but not impossible. Kind, but not soft.
You know how to eat.
What You'll Do:
Collaborate with the executive chef on menu development and execution with seasonal revisions.
Build and lead a kitchen teamtrain, delegate, motivate.
Manage food costs, sourcing, and kitchen operations.
Collaborate closely with ownership on the vision and evolution of the restaurant.
