Essential Functions:
- Writes weekly schedule for bakery department with Chef
- Prepares base ingredients for daily production of bakery items
- Sets professional standards for consistency and excellence of production
- Completes, or oversees completion of daily production
- Adheres to company standards and policies
- Maintains a safe and sanitary work environment
- Maximize profitability within food cost guidelines
- Prepares laminated dough, puff pastry and croissants.
- Prepares French breads, pain au lait, pain de mie, brioche
- Prepares Artisan Anceint Grain breads.
- Direct and in-direct dough, overnight fermentation
- Be an active and participating member in daily operations of team, including cleaning duties.
- Create great morale- set the positive mood.
- Monitor loss and spoilage.
- Maintain proper sanitation procedures.
- Observe all health and safety rules.
- Maintain all machinery; communicate with the Bakery Manager and store leadership.
- Follow and comply with established procedures, including, health and sanitation, and adhere to safe work practices.
- Operate and sanitize all equipment in a safe and proper manner.
- Performs other such duties as assigned
Skill & Knowledge Requirements Include:
- Extensive knowledge of French Bread Baking procedures preferred.
- Capable of teaching others in a constructive and positive manner.
- Minimum 3 to 4 year of bread baking experience or equivalent.
- Ability to communicate effectively with customers and team members.
- Ability to operate all necessary equipment.
- Basic computer skills.
- Able to delegate responsibilities.
Compensation: Salary ($70,000.00 - $95,000.00)
