LOCATION: The Perlant, Atlanta

EFFECTIVE START DATE: 05/5/2025

PAY RATE RANGE: Up to $27/per hour BOE

The kitchen at The Perlant is a team that works together to get through every ticket that comes in. In the kitchen you will learn how to take classic techniques and apply them to new and fun ways to work with ingredients. The kitchen at The Perlant has one voice, but offers autonomy to make positive decisions that improve service for our members. When we are in service, all outside distractions disappear and we execute, together, call after call. POSITION SUMMARY:

At The Perlant, the Line Cook plays a vital role in ensuring culinary excellence, consistency, and precision during service. This position requires strong technical skill, a high level of organization, and the ability to thrive in a collaborative, fast-paced fine dining environment. Line Cooks are expected to uphold the highest standards in food preparation, cleanliness, and communication while contributing to a seamless and elevated guest experience.

KEY RESPONSIBILITIES:

  • Prepare and maintain your station in a state of readiness for every shift, with a team-oriented mindset.
  • Ensure all fresh herbs are picked, chopped, and organized prior to service.
  • Wipe down and sanitize the kitchen line thoroughly before service begins.
  • Monitor protein inventory and immediately notify the Chef when five or fewer portions remain.
  • Temper proteins such as steaks and chickens in advance of dinner service to ensure proper cook times and quality.
  • Maintain a clean, organized, and sanitary workstation at all times.
  • Communicate proactively with porters and sous chefs regarding pot and pan availability, and with runners regarding plate stock levels.
  • Ensure all sauces and plated dishes meet the visual and flavor standards established by The Perlant.
  • Collaborate closely with the Sous Chef, asking questions when clarification is needed to maintain consistency and alignment with service expectations.
  • Participate in end-of-service breakdown, including scrubbing down your station, providing inventory updates, and preparing your personal prep list for the following shift.

  • Multitasking: Manages a high volume of tickets and components simultaneously without compromising quality.
  • Teamwork: Maintains a collaborative and respectful relationship with all BOH and FOH staff to ensure seamless service.
  • Adaptability: Responds calmly and efficiently to unexpected situations, special requests, or service adjustments.
  • Physical Stamina: Capable of standing for extended periods and working long shifts in a physically demanding environment.
  • Communication Skills: Communicates clearly and effectively to ensure coordination, timing, and team alignment.
  • Menu Knowledge: Thoroughly understands each dish, its components, preparation methods, and ingredients.

WORKING CONDITIONS:

  • Full-time position (evenings, weekends and holidays as required).
  • Based in Atlanta with an Office/Club environment.
  • Ability to lift wine cases and bottles up to 40 lbs.
  • Ability to stand and walk for extended periods.
  • Ability to work in a fast-paced, high-volume environment.
Compensation Details

Compensation: Hourly ($27.00)
