Summary of Job Purpose

The Food & Beverage department is team-oriented and focused on providing our guests with excellent customer service and a pleasurable dining experience.

The Food and Beverage Grill Cook plays a key role in preparing and cooking food in a fast-paced environment in both inside and possible outside serving areas. To be successful in this role you must possess exceptional grilling abilities in a very busy operation.

The Grill Cook has the responsibility to interact pleasantly and professionally with guests while busily preparing and serving food orders, never compromising quality over quantity.

Working as a team member and focusing on fulfilling our guest’s needs play a key role for the Grill Cook.

Job Duties and Responsibilities

Under the supervision of the Food & Beverage Manager and Supervisor, the Grill Cook shall be required to:

  • Prepare and cook meat and vegetables with a high degree of skill
  • Cooperate with other cooks and line workers to efficiently serve guests. Communication is key to ensuring the timely delivery of all meals. Must be cool, calm and collected during height of operation
  • Follow all food safety and risk management guidelines
  • Maintain a workstation that is both clean and sanitary.
  • Obtain and maintain a valid “California Food Handlers Card”, we recommend ServSafe.
  • Long hair must be tied up at all times, in a hat, hair net or pulled back.
  • Ensure stocking is current for the opening shift.Rotate, label and control food usage. (FIFO)
  • Maintain waste and temp logs.
  • Clean and empty garbage, clean up the work area, and take dirty dishes to the dish room.
  • Assist in maintaining inventory by tracking, labeling, and replacing key ingredients
  • Other duties as assigned
Job Qualifications
  • Must be 18 years of age
  • Prior line cooking experience
  • Knowledge of ingredients, preparation methods & high allergens
  • Positive attitude and ability to thrive in a fast-paced environment
  • Strong communication skills
  • Availability to work days, evenings and weekend shifts
  • Exceptional attention to detail and organizational skills, NEVER compromising quality over quantity yet with an urgent manner as needed
  • Knowledge of and willingness to adhere to all food health and safety guidelines
  • Willingness to continue learning and improving your craft
  • Good organizational skills and a team player
  • Must be well groomed and present a good public image.
  • Good physical condition as this position may require shoveling, lifting and carrying.
  • Good manual and physical dexterity skills.
  • Safety and risk orientated.
  • Requires the skills of a host. This involves approaching guests in a courteous manner, inquiring if they have any questions and being able to respond professionally.
  • Comply with all departmental and company policies and procedures.
  • Responsible use and care of all kitchen and food service equipment.
  • Provide a positive and helpful attitude towards all our guests and all Dodge Ridge employees
  • Be an effective motivator and team leader for the department
Work Schedules

Weather conditions and the number of guests play a significant role in the work scheduling of employees.

When conditions are normal, you may be expected to work 40 hours per week, including weekends and holidays. During busy periods, you may be expected to work 6 days a week.

You must arrange for transportation to work so that you arrive at your designated workstation at the scheduled time.

Working Conditions

At any time during the season, Dodge Ridge employees must often perform their tasks in variable weather conditions; high winds, rain, snow, and extremely warm temperatures.

Work is typically inside (sometimes outside) working directly with resort guests and other resort staff members. During busy periods of operations it can be noisy, cold, hot, dry, or humid. You may be expected to work in warm places and often you will work around hot and cold objects. At times you may be asked to work the grill, as a line server, or a server for an extended time period.

Uniforms

A professional appearance at Dodge Ridge is required. Please always wear your nametag and uniform during your scheduled shift. We will supply most of the uniform for you to do your job. However, you will have to supply some items as part of your job, as listed below. The quality, color, and style of the items must be approved by your manager prior to being worn to work. All hats worn must have the Dodge Ridge logo while on shift.

  • Appropriate Pants

The riding employee represents a model for safe riding for both the guest and fellow employees. You are required to be aware of all safe riding procedures, trail closures, and out-of-bounds policies.
