Job DetailsTalented PASTRY CHEF needed for multi-concept position. This chef will oversee all pastry, laminated dough and breakfast pastry production in a central commissary. The commissary is currently servicing 2 casual restaurants, one very upscale bakery/cafe and some wholesale. The focus is on the current operations as well as the 3 new locations coming soon. Going forward, wholesale will not be a focus.
One of these new locations will be an upscale restaurant and will need a full pastry program put in place and the ongoing menu changes.
This is an overseeing role, not a production position. You will be expected to maintain high quality standards, staffing levels and training to the assistant pastry chef, production manager etc. Currently the staff is very qualified, coming from one of the best bakeries in Los Angeles so you will not be starting from scratch.
This is a new position and with the new locations coming online soon, this position can develop into the Corporate Pastry Position for the chef that has the needed experience.
Offering up to $100K base salary, full benefits and potential bonuses and a long term growth plan. As more openings happen, the salary and benefits will grow with the position.
Duties
- Oversee production of a wide range of pastries, cakes, and laminated doughs etc according to established recipes as well as recipe development for new menus.
- Costing of new menu items.
- Collaborate with the Head Baker on new items as needed.
- Stay updated on industry trends and techniques to enhance menu offerings.
Skills
- Proficiency in various pastry techniques including plated pastries, laminated doughs, morning pastries and the like.
- Strong knowledge of food safety regulations and practices.
- Successful experience running a large crew, overseeing all production.
- New menu development from idea to creation to costing.
- Excellent attention to detail with a focus on presentation quality and consistency.
- Strong organizational skills to manage multiple tasks efficiently in a fast-paced environment.
Compensation: Salary ($90,000.00 - $110,000.00)
