We will be opening a crafted cocktail focused speakeasy called Simmer Down along with a Mediterranean influenced wood-fired menu at The Quoin Restaurant.
Join our talented team as we are seeking bartenders to bring our three unique and exciting bar experiences to life inside The Quoin Hotel in downtown Wilmington. Stir craft cocktails at our sleek speakeasy called Simmer Down (recently named one of ' The Best Bars in America 2024 ' by Esquire), or shake specialty spirits perched at the penthouse level in the areas first and only Rooftop Bar & Lounge, and finally indulge your guests in fine wines from our extensive wine list at the Quoin Restaurant main dining room featuring inspired Italian flavors with a wood-fired flare.
