We are currently seeking an experienced, passionate, and highly skilled Head Chef (Pastry & Bakery Production) to lead our production kitchen and take our brand to the next level.

Position Summary:
The Head Chef will be responsible for overseeing all aspects of pastry and bakery production across multiple locations, ensuring the highest quality, consistency, and efficiency. This leadership role involves recipe development, team management, quality control, inventory management, and maintaining a positive and professional kitchen culture.

Key Responsibilities:

  • Lead, train, and manage the entire pastry and baking team (production staff, laminators, bakers, finishers).
  • Oversee daily production of viennoiseries, laminated dough, pastries, and other baked goods to meet quality and volume targets.
  • Maintain and enforce kitchen standards for consistency, cleanliness, hygiene, and safety (HACCP or ServSafe preferred).
  • Innovate and develop new menu items, seasonal specials, and creative pastries aligned with Lakon Pariss brand.
  • Manage kitchen scheduling, labor costs, food costs, and inventory control efficiently.
  • Collaborate closely with ownership and management on product development, production planning, and scaling operations.
  • Troubleshoot dough, lamination, and baking issues and ensure production problems are resolved quickly.
  • Maintain a positive, professional, and motivated team culture.

Qualifications:

  • Minimum 5 years experience in a professional pastry/bakery kitchen, with at least 2 years in a leadership role.
  • Expertise in laminated dough (croissants, kouign-amann, danish, etc.), pastry production, and baking.
  • Strong leadership and people-management skills with the ability to train and inspire a team.
  • Excellent time management, organizational, and communication skills.
  • Knowledge of bakery production equipment, kitchen operations, and food safety regulations.
  • Ability to work early mornings, weekends, and meet demanding production schedules.
  • Creative mindset with attention to detail and passion for French patisserie.
