Role Summary

The Corporate Chef de Cuisine will report to the Culinary Operations Director and be responsible for meeting corporate quality standards, establishing and enforcing food specifications, portion control, recipes, and sanitation. They will control food and labor costs while maximizing guest satisfaction for all venues. The Corporate Chef de Cuisine will lead BOH training for all current venues as well as all opening venues. They will be responsible for leading BOH operations for new venue openings, often requiring them to relocate for up to 3 months at a time. The ideal candidate will be an energetic professional who doesnt mind wearing multiple hats. They are well-organized, flexible, and enjoy the challenges of working in a fast-paced environment.

Responsibilities

  • Work alongside the Culinary Operations Director on developing, implementing, and managing culinary SOPs
  • Conduct interviews, onboarding, and training for all incoming Chefs and line-level staff
  • Act as the point of contact and oversee all BOH training for new venue openings
  • Take lead of any venue, both in Los Angeles and elsewhere, when operationally necessary
  • Collaborate with the Culinary Operations Director on menu and recipe development
  • Consult with the Culinary Operations Director on equipment procurement and kitchen buildouts
  • Work closely with venue Chefs to maintain and manage food costs
  • Work closely with Human Resources and venue Chefs to maintain proper staffing levels and successful talent acquisition
  • Manage vendor relationships and food POs
  • Oversee culinary systems, including the maintenance all recipe books, both in venue and in corresponding internal systems
  • Ensure compliance of company policies and procedures
  • Serve as an example for the culinary team and act as a resource to all BOH staff

Requirements

  • Must be able to travel for up to 3 months at a time
  • Must have attention to detail and willingness to deliver exceptional customer service
  • Must have high energy, great communication skills, and the ability to work as part of a team
  • Must be able to maintain a professional demeanor in a fast-paced environment
  • Must be reliable, responsible, and trustworthy
  • Must have excellent time management skills
  • Must be able to stand during their entire shift, often up to 8 hours with frequent bending, squatting, and lifting up to 30lbs.
  • Must have a certified Manager Food Handlers Card

Compensation: Salary ($115,000.00 - $125,000.00)
