Job DetailsCaptain
The Captain position at Citrin / Melisse is filled by people who possess a genuine love of food, wine and hospitality, exemplary grace, thoroughness, efficiency, diligence, and style. Besides keeping abreast of menu changes, captains are expected to know and will be expected to perform all technical service functions through the course of a typical service. Captains should not leave the floor during service unless direct correspondence with the kitchen is necessary. The Captain is the single most important role in caring for the Guest.
Restaurant Operations
- Perform assigned side work.
- Handle computer operations for station. All handling of gratuities must take place out of public view.
- Have detailed knowledge of the menu. Stay abreast of menu changes.
- Have knowledge of the wine list and be able to pair wines by the glass with menu items.
- Know the house cocktails; basic ingredients, taste.
- Be fluent in the use of the POS system.
- Adhere to your work schedule.
- Adhere to the restaurant grooming, uniform, and hygiene standards.
During Service
- Take all Guests orders as necessary.
- Oversee the placement of flatware, glassware, and other extras for each course.
- Execute food delivery with the help of your Back Waiter.
- Execute beverage service and adhere to proper wine service standards.
- Supervise the clearing of tables and mis-en-place necessary for the next course.
- Understand thoroughly and articulate with enthusiasm the details of Citrin / Melisse
- Anticipate needs of the Guest and exceed their expectations.
- Take the extra step to turn good service into great service and make it an experience each Guest will remember.
- Serve as the identifiable representative of Citrin / Melisses food, wine, beverage, and warm atmosphere.
- Minimize breakage with proper handling of china and glassware.
- Clean and maintain your work area at all times.
- Assist other stations, when requested.
- Act professional and accommodating and always maintain your composure.
Communications
- Communicate with your Managers. Identify and report problems immediately.
- Communicate the daily specials to the Guest before they ask. Be able to up-sell.
- Know how and when to provide information that the Guest needs, wants, and does not yet know he/she wants, tactfully and with confidence.
Requirements
- 2 to 3 years in a similar position or related field experience
- Strong wine and spirits knowledge
- Strong communication skills and immaculate presentation
- Ability to work under pressure and remain calm in tense situations
- Ability to multi-task and coordinate with various team members
Compensation: Hourly ($17.27) plus tips
Estimated Weekly Tips: $1,250
