POSITION SUMMARY
The Captain position works with the management team and all other front-of-house and back-of-house team members. The position is responsible for serving guests in a warm, accommodating and professional manner to ensure total guest satisfaction. This position will oversee a specific station in the restaurant and should always present on the floor making sure that the guest experience runs smoothly.
ESSENTIAL JOB RESPONSIBILITIES
- Deliver a high-quality food and beverage dining experience to all guests.
- Greet guests in a timely and professional manner.
- Make menu recommendations and explain culinary concepts including the fish market, to enhance the guest experience.
- Take note of any allergies or dietary restrictions and promptly communicate with management and kitchen.
- Take lead on all guest orders and place them into the POS system correctly.
- Clearly explain the coursing, pairing and timing of meals consistent with the core culinary philosophy/concept.
- Support with selection and execution of wine service to enhance the guest experience.
- Fire all courses appropriately.
- Support management with training new staff members.
- Maintain knowledge of menu presentation standards and food and beverage preparation techniques.
- Follow dining room etiquette and steps of service at all times.
- Detail section and inspect for cleanliness of silverware, china, glassware, linens, chairs and floors.
- Complete all assigned side work relevant to interactive guest service in compliance with the 80/20 rules.
- Consistently report to scheduled shifts on time.
- Any other tasks as assigned by immediate supervisor.
KNOWLEDGE, EXPERIENCE AND SKILLS
- Minimum of 3 years as a Captain in an upscale. High volume restaurant required
- Posses and exhibit a drive to provide exceptional service
- Ability to communicate effectively and eloquently, both verbal and written, collaboration skills with demonstrated high degree of emotional intelligence to manage and lead a diverse team.

PHYSICAL REQUIREMENTS
- Ability to perform essential job functions consistently, safely, and successfully with the ADA, FMLA, and other federal, state, and local standards, including meeting qualitative and/or quantitative productivity standards.
- Ability to maintain regular, punctual attendance consistent with the ADA, FMLA, and other federal, state, and local standards.
- Must be able to lift and carry up to 25 lbs at times.
- Moving about on foot to accomplish tasks, particularly frequent movements from place to place within the work area and property. Bend, lift, carry, reach/extend arms, and hands above shoulder height frequently, or otherwise move in a constantly changing environment.
- Climbing steps regularly
- Prolonged periods standing or sitting at a desk and working on a computer.
COMPENSATION
The base pay range for this position is minimum wage and a tip credit is taken when applicable. The determination of what a specific employee in this job classification is paid depends on a number of factors, including, but not limited to, prior employment history/job-related knowledge, qualifications and skills, etc.
