JOB OVERVIEW
Pastry Cook 1 is a senior production role responsible for executing complex pastry recipes and overseeing station organization, prep, and plating in alignment with Faena's standards. This role requires technical skill, speed, and creativity to support service and banquet operations at the highest level.
This full-time position has an hourly wage of $33.00 per hour.
DUTIES AND RESPONSIBILITIES
Prepare all baked goods, plated desserts, and specialty items according to executive chef recipes and standards
Lead station setup and execution during service, ensuring mise en place is complete and organized
Monitor oven and refrigeration equipment, ensuring all items are stored and rotated properly
Maintain cleanliness and sanitation of pastry kitchen in compliance with DOH standards
Support training and supervision of Pastry Cook 2s and pastry interns
Collaborate with chefs and front-of-house team to ensure dessert presentations align with guest experience
QUALIFICATIONS DESIRED
3+ years of professional pastry experience, preferably in a luxury hotel or fine dining restaurant
Advanced understanding of pastry techniques, chocolate work, doughs, creams, and frozen desserts
Ability to lead a station during high-volume service
Excellent time management and organization skills
Food Handler Certification preferred
SKILLS
Advanced pastry technique and recipe execution
Strong station management and time efficiency
Keen eye for plating precision and presentation aesthetics
Ability to lead by example and support junior team members
Organized, clean, and calm under pressure
PHYSICAL DEMANDS AND WORK ENVIRONMENT
Endure various physical movements throughout the work areas
Ability to move safely in uneven terrain or in confined spaces
Remain active, constantly moving, or prolonged periods sitting at a desk and working on a computer throughout work shift
Medium Work: Exerting up to 40 pounds of force occasionally, and/or 20 pounds of force frequently, and/or up to 10 pounds of constantly moving objects, may occasionally lift and/or move up to 25 pounds
